Sítio Canaã translates to ‘The Promised Land’, and protégé-turned-producer Kleumon Silva Moreira is proving he’s one to watch with this delectable microlot. With guidance from famed Brazilian producer Antônio Rigno, Kleumon planted on his high-elevation farm a collection of Arara, Acauã, Paraiso and Topázio trees—all cherries that inform this cup.
Kleumon is a conscientious and progressive producer, and has a nursery on the Sítio Canaã farm where he grows saplings and young coffee trees to other local producers, ensuring specialty coffee will be grown in the Piatã region for many more generations.
A pulped natural processing (where the beans are dried with mucilage intact) impart sweetness and a subtle acidity to Kleumon’s coffee. Overall, the cup’s clarity and honey finish point to potential fulfilled, and the promise of more delicious coffees to come from this exciting producer.
