ABOUT THE BEAN

Rich and sweet with notes of blackberry jam and grape. Finca Santuario was started with a clear vision to produce the best specialty coffees in Colombia. The harmonious relationship the farm has with their surrounding environment allows for the creation of the most spectacular coffees in the region. The harvested cherries were soaked in water for 4 hours before wet milling and then dry aerobic fermentation fro 14 hours. After fermentation the coffee was dried on raised African beds for 18 days, reaching a final moisture level of 10.5% After drying the final stage was 8-10 days of stabilisation.
