ABOUT THE BEAN
A floral cup, with white peach sweetness and a clean citrus acidity.
The La Palestine farm is located two hours from the city of Jaen in El Triunfo village, an area know for fertile sandy soils and high rainfall. Originally established in 1951 by his parents, Jose has been operating the farm since 1990. This is a washed process coffee. The cherries were mechanically pulped and wet/dry fermented for 24 hours. The coffee was then washed and dried in a solar dryer until the desired moisture level was achieved.
