ABOUT THE BEAN
Elegant and transparent, with white blossom florals, crisp stone fruit acidity and a tea-like body.
This micro-lot is a Geisha variety from Santa Clara Estate, in Antigua run
by the Zelaya family who has been growing coffee for over 100 years.
Every cherry is selectively hand-picked, sorted then inspected and
approved by the foreman at the wet mill. Then placed in sealed Ecotact
bags and taken to the mill, oxygen is removed from the bags and cherries
undergo anaerobic fermentation for 14-20 hours. Next they are depulped,
washed and dried slowly and evenly on the patio and then on raised beds,
with a greenhouse-style enclosed canopy.
