ABOUT THE BEAN
Hacienda La Union has been in the Castro-Kahle family since the 1840's. Currently it is run by
Alejo Kahle Castro, a producer whose dedication to quality and innovation has seen him picking up multiple places in Cup of Excellence competitions.
All of the cherries from Hacienda La Union are processed at the Volcan Azul micro mill. After sorting and cleaning the cherries are taken to the patio on raised beds with all the pulp The coffee is stirred each day from 8am to 2pm. At 2 pm the coffee is covered with plastic, to maintain temperature during the night.The process takes between 12 and 16 days depending on the weather.
The natural processing results in a fruity, rich and complex cup. Not one to be missed!
