Coffee out of Copacabana Colony, from Carmalita is a small farm of 3 Hectars owned by Carmela. Carmalita is also a part of Agricafe’s Sol de la Mañana program, which is aimed at improving infrastructure, farming practices and sustainable future for coffee in Bolivia.
This coffee is a simple naturally processed coffee that utilises the traditional and progressive methods of drying to make this coffee come to life. Its a very sweet, ripe tropical fruit profiled coffee that is done by tweaking different parts of the Coco natural process. The coffee cherries are sterilised after picking, a method widely used in wine industry, the coffee is then dried in raised beds for 11 days and then further dried in mechanical coco dryers until a desired moisture content is achieved giving it a very distinct long chocolate like aftertaste.
